Strawberry Gum Dressing
A sweet vinaigrette dressing made with Australian native Strawberry Gum. Perfect for tossed green salads with fresh tomato and goats cheese. For an extra Australian twist to your salad add fresh native rivermint and season with pepperberry salt.
2 TBSP Saltbush Kitchen Strawberry Gum Syrup
2 TBSP White wine vinegar
1 Sprig Native thyme (or traditional thyme) 2cm – 3cm long
¼ Clove Fresh garlic
1 Pinch Pepperberry Salt (or cracked pepper & salt)
Combine wet ingredients and pepperberry salt and whisk together. Transfer into a small jar (or container) and add the sprig of native thyme & garlic clove. Set aside to infuse for 2 hours.
