Tomato & Kunzea Sauce
A delicious Australian inspired tomato sauce with native kunzea. This is a staple tomato sauce at the Saltbush Kitchen HQ. I enjoy it as a condiment with meats, tarts and quiches and also as an ingredient to tomato-based dishes. This sauce has a unique Australian flavour to it using native kunzea - a unique aromatic herb from Tasmania that resembles rosemary.
Wattleseed Syrup
An intense and delicious syrup with the unique Australian flavour of dark roasted wattleseed. Imagine a rich espresso coffee syrup. Great as a drink with milk and lots of ice (a great coffee alternative), over ice-cream, in cocktails, in salad dressings and drizzled over freshly cooked chicken and pumpkin.
Beetroot Fritters with Kunzea
Yummy fritters using beetroots, corn and native kunzea. These fritters are great for breakfast with eggs, or for a light lunch with salad.

A clear winner in the shortbread stakes. It showcases lemon myrtle & saltbush and is a tasty recipe that is a great example of how you can adapt your favourite recipes to include native bushfoods. The icing is optional, this recipe has pepperberry, but you can substitute that with lemon myrtle or saltbush.
